Place the crackers in a zip-lock bag and using a rolling pin crush the biscuits into crumbs. |

Place all the ingredients into a large mixing bowl. Using your hands combine all the ingredients. When the mixture is almost dough-like remove and roll out on a flat surface. |

Divide the meat into equal portions, use a dessert spoon to measure each ball. Flatten, then chill in the fridge. |

Next, prepare the dressing, pour the yoghurt into a bowl, add the remainder of the ingredients and mix, cover and chill in the refrigerator. |

Heat some oil in a pan on a low heat and start to brown the meat, this should take around 10-15 minutes. |

While the meat is cooking warm the bread in the microwave, fold, and set out on a serving dish. |

Add a layer of yoghurt then onion, then the meat in the centre of the bread. |

Top with more yoghurt, feta cheese, olives, tomato, red onion, mint and mini greens. Season and serve. |
