Ingredients

For the Patties
500 g Minced Beef or Lamb Medium pack
5 Cream Crackers Crushed
12 cloves Garlic Chopped
1 Egg
1 tsp Oregano
1 tsp Cayenne Pepper
6 Anchovies Chopped
2 tbsp Crumbled Feta Cheese
Rind of Lemon
For the Dressing
4 tbsp Greek Yoghurt
4 tbsp Mint Fresh & Chopped
Juice Lemon
2 tbsp Cold Water
Salt & Pepper
To Serve
4 medium Arabic Flatbread
Red Onion Thinly Sliced
Handful Coriander
Cherry Tomatoes Sliced
4 tbsp Crumbled Feta Cheese
Leaves of Coriander
Mini Greens

Steps

Place the crackers in a zip-lock bag and using a rolling pin crush the biscuits into crumbs.

Place all the ingredients into a large mixing bowl. Using your hands combine all the ingredients. When the mixture is almost dough-like remove and roll out on a flat surface.

Divide the meat into equal portions, use a dessert spoon to measure each ball. Flatten, then chill in the fridge.

Next, prepare the dressing, pour the yoghurt into a bowl, add the remainder of the ingredients and mix, cover and chill in the refrigerator.

Heat some oil in a pan on a low heat and start to brown the meat, this should take around 10-15 minutes.

While the meat is cooking warm the bread in the microwave, fold, and set out on a serving dish.

Add a layer of yoghurt then onion, then the meat in the centre of the bread.

Top with more yoghurt, feta cheese, olives, tomato, red onion, mint and mini greens. Season and serve.
