1 Large Cauliflower
100g Crumbled Feta Cheese
1 1/2 cups Breadcrumbs
2 Chopped Spring Onions
2 Cloves Garlic Chopped
1 Free-Range Egg Yolk
2 tbsp Flour
1 Cup Chopped Coriander
2 tsp Dried Thyme
1 tsp Cayenne Pepper
Salt & Pepper
3 tbsp Vegetable Oil For Frying

Bring a deep pot of salted water to the boil, wash the trim cauliflower and break off the heads, add to the pot and simmer for 5 minutes.

Remove the pot from the heat, drain the cauliflower, and leave to cool.

In a large mixing bowl combine the remainder of the ingredients.

Once the cauliflower has cooled, place it in a food processor. Using the pulse setting, blitz into a grain-like texture.

Add the cauliflower to the bowl and combine, use your hands to mix into a dough.
(Add a little more flour if needed)

Divide the dough into 12, roll in your hands to form patties. Flatten them into disks, cover, and chill in the fridge for 30 minutes.

Now, heat the oil over a medium heat and shallow fry each patty until golden in colour.

Place on a wire tray to cool slightly, then serve.
