1 Large Cubed Sweet Potato

1 tbsp GingerGrated

1 Red OnionChopped

200g Spinach

1 can TomatoesChopped

1 tbsp Worcester Sauce

In a deep pan bring the vegetable stock to the boil. Add the sweet potato, ginger, onion and spices, season and reduce the heat to and simmer for 30 minutes. |

Next, stir in the spinach, chopped tomatoes, Worcester sauce and mascarpone cheese. |

Simmer for a further 15 minutes. |

Turn off the heat, using a handheld blender blitz the soup until smooth. |
