Ingredients

Adjust Servings:
1 Litre Vegetable Stock
1 Large Cubed Sweet Potato
1 tbsp Ginger Grated
1 Red Onion Chopped
2 Cloves Garlic Chopped
2 tbsp Turmeric
2 tbsp Cumin Seeds
1 tsp Smoked Paprika
Salt & Pepper
200g Spinach
1 can Tomatoes Chopped
1 tbsp Worcester Sauce
250g Mascarpone Cheese Keeping a little to serve

    In a deep pan bring the vegetable stock to the boil. Add the sweet potato, ginger, onion and spices, season and reduce the heat to and simmer for 30 minutes.

    Next, stir in the spinach, chopped tomatoes, Worcester sauce and mascarpone cheese.

    Simmer for a further 15 minutes.

    Turn off the heat, using a handheld blender blitz the soup until smooth.

    Serve topped with some fresh pepper and mascarpone cheese.
