1 large Chicken Cut into pieces
2 tbsp Za'taar Spice Mix
2 Garlic Chopped Cloves
1/2 tbsp Rock Salt
1/2 cup Olive Oil
Lemon Juice and Zest
Slices Lemon
Coriander Chopped to serve

Za’atar is a blend of dried thyme, oregano, marjoram, sumac, toasted sesame seeds, and salt.

Preheat the oven to 180C degrees

Wash and trim the chicken and divide it into equal parts.

Place the Za’taar spice mix in a pestle and motor with the garlic and rock salt and crush.

Add the lemon juice, zest, then and add the oil and mix into a paste.

Place the chicken in an ovenproof dish.

Coat with the marinade (Best to do this as far in advance as possible).

Cook in the oven for 40-50 minutes basting halfway.

When cooked serve topped with lemon slices and chopped coriander.
