Preheat the oven to 180C degrees |

Wash and trim the chicken and divide it into equal parts. |

Place the Za’taar spice mix in a pestle and motor with the garlic and rock salt and crush. |

Add the lemon juice, zest, then and add the oil and mix into a paste. |

Place the chicken in an ovenproof dish. |

Coat with the marinade (Best to do this as far in advance as possible). |

Cook in the oven for 40-50 minutes basting halfway. |

When cooked serve topped with lemon slices and chopped coriander. |
